Often people want a simple, easy to make cake to do in camp, this one can be whipped up in 10 minutes or less, self-rising flour can be used instead of flour, baking powder and salt to simplify things.
I got this recipe from my friend Matt Moore aka Gopher Grease.
Basic cake
1 stick butter 1 cup sugar (white or brown) 1 ¾-2 cups flour 1 cup milk 2 lg eggs 2 teaspoon vanilla 2 tablespoon baking powder 1/4 teaspoon salt
Cream the butter and sugar together, beat in eggs,stir in the milk.
Mix the flour, baking powder and salt together. Add 1 cup of the flour mix in and beat by hand 100 strokes.
Fold in the rest of the flour mix. Batter should be a little thicker than a box cake mix.
Makes two 9inch rounds or one 12 inch shallow dutch oven. Bake at 350F (medium hot oven) for approximately 30 minutes until knife comes out clean.
Cake can be frosted if desired, nuts, fruits both dried and fresh can be, spices, or about anything desired including cocoa to make a chocolate version.
Putting a streusel topping on a cake of this type makes what is often called a coffee cake.
Streusel Topping
4 tablespoons butter ½ cup flour 4 tablespoons packed brown sugar ½ teaspoon ground cinnamon
As Matt says, "you can add chopped fruit, spices, almost anything to it and have a different cake everyday."
